Las Olas was started in Torquay, Victoria by Californian born Michael Baker.
Michael is a keen surfer and indentified a lack of quick service quality Mexican food available in Australia. Unable to tame his hunger after a surf, Michael started Las Olas with the aim of replicating the success of quick service food in California.
Three years on, Achalen Holmes recognised the business potential of Las Olas and joined the team. Shortly thereafter, shop two was opened, followed by shop three eighteen months later.
In early 2008, the partners decided to push ahead with franchising, realising that this business model was extremely well suited to Las Olas becoming a competitive brand.
